Dry Mizithra Cheese of Madamados
• Local cheese of sheep and goat whey.
• It's about a hard cheese in the shape of a small head, with a solid texture, salty and sour taste, with obvious aromas of milk.
• Free from additives and preservatives, it has a rich taste and a strong aromatic aftertaste. It does not contain milk or cream, it is low in fat but also very rich in protein, so ideal for a light diet!

• Light yellow color, with round holes and a natural crust. Rich smell of fresh milk and almond.
• A mild taste, without missing the spicy and peppery notes that remain in the tasty, buttery aftertaste and good sense of ripening.
• Mytilene's Gruyere is made from sheep's milk, usually with a little bit of goat's blend. It is an excellent table cheese with a mild taste and rich body.
• And remember: The harder the cheese, the less lactose it contains!
Fresh Butter of Madamados
Produced from local pasteurized goat and sheep milk. It stands out among all the other local butters for its unique aroma and has deservedly won the "excellent" from the chefs who use it!

Dry Anthotyro Cheese of Polychnitos
Comes from fresh cream cheese but dried, ripe and salted. It is characterized as a semi-hard, table cheese, white, without holes with brackish, buttery taste with rich aromatic characteristics and smoky aftertaste!

• The Feta of Mytilene PDO is distinguished for its aromas from fresh milk, texture with moderate density that is pleasantly rubbed in the mouth, rich and buttery taste.
• Cheese with a special personality, given the special organoleptic elements of local milk (especially rich in fat and proteins) produced by local breeds of well-fed sheep and goats: "Fiery" soil and with many mountainous areas, dry thermal conditions, rich vegetation with many native plants (herbs and others) that give milk a special quality and taste.
• Mytilene's FETA is produced, like any PDO feta cheese, from a mixture of sheep and goat milk (30%) and vary in hardness and texture from factory to factory.
• Τhe second most famous local product of Lesvos, after ouzo, the oil-cheese- called Ladotyri- of Mytilene is another fine Greek product.
• Medium- hard, lightly scented with rich buttery aftertaste.
• Made exclusively on the island of Lesvos, from sheep's milk or goat's blends - up to 30%
• It belongs to the category of cheese with rich milk flavor. The milk comes from Lesvos, from local breeds of sheep and goats that live and feed under the particular climatic and geophysical conditions of the island. This contributes to the production of milk with a particularly rich texture and excellent organoleptic properties.

The must-have in traditional pies, pizzas, tartes and cheese breads, pasta plates – stuffed or not, fresh salads, trahanoto, frumenty and stuffed frumenty rasks (hahles), stuffed meat in oven, stuffed eggplants (the perfect matching!), cooked vegetables, or greek honey and marmalades (try first a flavor tomato marmalade!).

Perfectly matches with grilled onions and other grilled vegetables, with a delicacies plateau including also table olives, sundried tomatoes and barley rasks , with a variety of selected cheeses, with pasta recipes, also cooked as “ saganaki” (maybe the best of it!!), or accompanied with citrus fruits’ marmalades, or added to traditional greek recipes like sfouggato, frumenty rasks or stuffed zucchini flower.
- Served with white or rosé wines.

Raw or cooked, cherise authentic greek flavor to your creations! Assorter with greek honey or fresh fruits, added in a greek cheese plateau or in oven grilled meat (lamb, pork, chicken), added in pies, tartes, baton selees, fresh sandwiches and snacks, soufflés, pizza or even better in traditional Greek recipes (like sfouggato, stuffed zucchini flower etc), stuffed frumenty rasks (hahles) .

With its intense milk flavor, its delicious and memorable taste, is ideal in grated form added in traditional pasta and pulses plates, in fresh salads and other Greek traditional recipes like pies, mizithra pies, ghiouslemedes, kaltsounia!
For those who prefer a lighter – not so..traditional taste – can be perfectly matched with hard cheeses of lighter taste and more neutral flavor.
